Results of February’s experiment suggest up to a week left unattended has no major effect though the output might be a bit smellier (dead bacteria?) This disappears however when the whey is removed. Also, using diluted soy milk has definite advantages – using 50-75% soya milk makes it possible to leave milk in gallery till completion (how do we know for sure this has happened? – No milk in the whey after straining raw yogurt).
